Theisoelectricpointofcaseinis4.6.Sincemilk'spHis6.6,caseinhasanegativechargeinmilk.Thepurifiedproteiniswaterinsoluble.Whileitisalsoinsolubleinneutralsaltsolutions,itisreadilydispersibleindilutealkalisandinsaltsolutionssuchassodiumoxalateandsodiumacetate.
